Umami.  You’ve heard of it, but what is it?  To keep it simple, it’s savory.  We can taste five flavors, sweet, salty, sour, bitter and Umami (savory). If savory doesn’t describe the burger I just had, I don’t know what does!

The #TCBN crew of @shawnsrodgers, @phatphood and myself made sure we got out to Travail Kitchen’s Umami pop-up.  Go online and get tickets for their tasting menu, but you need to know that you can hit the bar and enjoy their special food and drink, bar menu, without a reservation.  This bar menu includes “Burger”!

The beef, an amazing blend of wagyu, short rib, prime rib chuck and tri-tip flap from @snakeriverfarms is fantastic!  It’s juicy, super flavorful and cooked to a perfect temp.  Not one, but two slices of American cheese.  Their bacon?  Chopped.  I love chopped bacon.  You get bacon with every bite.  Delicious onions, and jalapeño chow chow top the patty.  Chow chow is a pickled relish.  It’s very good.  Miso provides even more umami flavor to this burger.

If this house-made bun looks familiar, it is.  Alex made a very similar burger bun over at St. Genevieve.  It’s firm, yet soft, perfectly toasty, with that little crunch around the outer edge.  It might be the best bun you’ll ever have.  This burger is a work of art, it is absolutely fantastic!

You’ve only got until mid March to come out and enjoy the Umami pop-up.  Don’t miss it.  I love this burger!
