Standards. People say, you need to lower your standards, even more say, you need to raise your standards. It’s been two years since my last visit to The Wilder Scratch Kitchen. Their “standard” has changed dramatically. If this is the new standard in the burger world, the Twin Cities is in great shape!
Chef Lundmark was kind enough to host a #TCBurgerNight two years ago. We had a such great time. There are so many places I don’t get back to, but then I saw one of Chef’s, Burgers of the Week, that totally caught my eye and I also noticed their Standard Burger sounded quite different.
There is nothing Standard about this burger unless we are talking about Elevated Standards. The 7oz. charbroiled patty from Revier Cattle Company is flavorful and juicy. Beautifully melted white American cheese makes a grand appearance here. It has bacon on it, but the bacon is chopped and then fried. I like bacon executed in different ways like this. The menu states fried onions, but these are first macerated in sugar and salt and then fried. They are tasty. Thin sliced, ice box pickles line the bottom bun, which happens to be a soft, toasty bun from Franklin Street Bakery. One of my favorite buns. All these great components make this a great burger, but then there’s a thing called burger sauce that knocks it out of the park and they don’t skimp on it at all. It’s delicious sauce. This is a fantastic burger!
The Wilder is a place that you will feel good supporting in this year that is 2020. Small restaurants like theirs have been hit hard by the lockdowns. Until they are allowed to have dine in customers, curbside pickup is your option. The menu is currently available on Instagram and Facebook. Call to put in your order.
The second burger pictured is the Burger of the Week. It’s a 1/4 pound beef patty with fried bologna, candied pickles and a tasty mustardaise sauce under the patty and fantastic chili and their delicious house made Cheez Whiz sauce on top. It’s amazing!
